Son bon fonctionnement est indispensable car il permet l\u2019absorption des micros et macros-nutriments contenus dans les aliments.<sup>[1]<\/sup> Tout au long du syst\u00e8me digestif, l\u2019aliment est transform\u00e9 gr\u00e2ce \u00e0 diverses \u00e9tapes m\u00e9caniques ou chimiques via la salive, la mastication, les acides biliaires et les enzymes.<sup> [1,2]<\/sup><\/p>\n<p>La digestion peut parfois \u00eatre perturb\u00e9e par diff\u00e9rents facteurs. Il a \u00e9t\u00e9 \u00e9valu\u00e9 \u00e0 13.5 milliards USD en 2022 et est estim\u00e9 \u00e0 23.1 milliards USD en 2032. Il peut \u00eatre divis\u00e9 en plusieurs cat\u00e9gories\u00a0: le lait, les fromages, glaces, desserts, yaourts. Ces produits connaissent une forte croissance due aux intol\u00e9rances et allergies.<sup>[6]<\/sup><\/p>\n<p>L\u2019Am\u00e9rique du nord repr\u00e9sente la plus grande partie du march\u00e9 des produits sans lactose avec les Etats-Unis au premier rang. En Europe, l\u2019Allemagne est le principal consommateur. Quant \u00e0 l\u2019Asie de l\u2019Est, c\u2019est la Chine qui repr\u00e9sente la plus grande part du march\u00e9.<sup>[6]<\/sup> La consommation des produits sans lactose devrait augmenter en Asie et Am\u00e9rique latine dans les ann\u00e9es \u00e0 venir. On obtient ainsi du glucose et galactose. Cette r\u00e9duction s\u2019accompagne d\u2019une diminution des risques de sensation sableuse et donc une meilleure acceptabilit\u00e9 de la glace.<sup> [9,10]<\/sup><\/p>\n<p>L\u2019utilisation de poudres de lait sans lactose dans les glaces permet \u00e9galement d\u2019obtenir un produit pr\u00e9sentant une texture plus souple. En effet le glucose et le galactose obtenus apr\u00e8s l\u2019hydrolyse du lactose abaissent le point de cristallisation de la glace. Ainsi \u00e0 une m\u00eame temp\u00e9rature, une glace sans lactose sera plus souple qu\u2019une glace contenant du lactose.<\/p>\n<p>Le lactose peut aussi \u00eatre \u00e0 l\u2019origine de la texture granuleuse d\u2019une glace \u00e0 cause de sa cristallisation.
