C\u2019est dans ce contexte qu\u2019\u00e9merge l\u2019<strong>enjeu prot\u00e9ique<\/strong>, une probl\u00e9matique qui risque encore de se renforcer dans les d\u00e9cennies \u00e0 venir. Est-il possible de fournir une quantit\u00e9 suffisante de prot\u00e9ines \u00e0 l\u2019ensemble de la population mondiale\u00a0? Cette croissance d\u00e9mographique est, principalement, port\u00e9e par les pays en d\u00e9veloppement. Ces derniers voient, de plus, leurs habitudes de consommation changer <a href=\"#_ftn2\" name=\"_ftnref2\">[2]<\/a> entra\u00eenant ind\u00e9niablement, une <strong>augmentation et une \u00e9volution de la demande mondiale en prot\u00e9ines<\/strong>. Pour r\u00e9pondre \u00e0 cet enjeu prot\u00e9ique, la question de la r\u00e9partition des ressources alimentaires et nutritionnelles se pose. Quelles solutions doivent \u00eatre mises en place pour <strong>nourrir l\u2019ensemble de la population mondiale en quantit\u00e9 suffisante<\/strong>\u00a0?<\/p>\n<p>&nbsp;<\/p>\n<h3>Un enjeu nutritionnel<\/h3>\n<p>Dans le monde, la consommation de prot\u00e9ines est tr\u00e8s h\u00e9t\u00e9rog\u00e8ne, sur le plan quantitatif et qualitatif [2]. Les populations des pays d\u00e9velopp\u00e9s consomment plus de prot\u00e9ines animales que ce qui est recommand\u00e9 par les autorit\u00e9s<strong> locales<\/strong>. Cette surconsommation \u2013 de viande notamment &#8211; s\u2019accompagne d\u2019un risque accru vis-\u00e0-vis de certaines pathologies\u00a0comme les maladies cardiovasculaires ou encore l\u2019ob\u00e9sit\u00e9. A l\u2019inverse, Dans les pays en d\u00e9veloppement, la consommation moyenne de prot\u00e9ines est inf\u00e9rieure aux recommandations. La priorit\u00e9 des pouvoirs publics de ces pays est avant tout d\u2019atteindre les recommandations en termes de quantit\u00e9 afin de lutter contre la malnutrition.<\/p>\n<p>Ainsi, sur le plan nutritionnel \u00e0 l\u2019\u00e9chelle mondiale, l\u2019enjeu prot\u00e9ique est double, il s\u2019agit de\u00a0:<\/p>\n<ul class=\"ul\">\n<li style=\"list-style-type: none;\">\n<ul class=\"ul\">\n<li style=\"list-style-type: none;\">\n<ul style=\"list-style-type: disc;\">\n<li><strong>R\u00e9\u00e9quilibrer l\u2019acc\u00e8s aux prot\u00e9ines \u00e0 l\u2019\u00e9chelle de la plan\u00e8te<\/strong> en allant vers une meilleure r\u00e9partition des ressources pour r\u00e9pondre \u00e0 l\u2019enjeu prot\u00e9ique.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul class=\"ul\">\n<li style=\"list-style-type: none;\">\n<ul class=\"ul\">\n<li style=\"list-style-type: none;\">\n<ul style=\"list-style-type: disc;\">\n<li>Dans les pays qui le peuvent,<strong> adapter les modes de consommation pour atteindre les recommandations<\/strong> Dans l\u2019ensemble des pays d\u00e9velopp\u00e9s, les recommandations sont unanimes, il faut favoriser les viandes maigres, les produits laitiers et les prot\u00e9ines v\u00e9g\u00e9tales. Au contraire, il est recommand\u00e9 de r\u00e9duire la part prot\u00e9ique apport\u00e9e par les viandes rouges et transform\u00e9es qui entra\u00eeneraient des risques pour la sant\u00e9 <a href=\"#_ftn3\" name=\"_ftnref3\">[3]<\/a>. L\u2019alimentation p\u00e8se pour <strong>plus de 28 % des \u00e9missions mondiales de CO<sub>2 <\/sub><\/strong><a href=\"#_ftn5\" name=\"_ftnref5\">[5]<\/a>. Or la production de prot\u00e9ines est particuli\u00e8rement gourmande en \u00e9nergie. Il existe toutefois des diff\u00e9rences d\u2019impact entre les diff\u00e9rentes sources de prot\u00e9ines. La viande et le lait, par exemple, ont des impacts environnementaux bien diff\u00e9rents. Cette diff\u00e9rence s\u2019explique, notamment, par le plus faible impact des syst\u00e8mes laitiers par rapport aux syst\u00e8mes de production de viande. En France par exemple l\u2019empreinte carbone moyenne du lait varie entre 1 et 1,5 kg CO<strong><sub>2 <\/sub><\/strong>par litre de lait<a href=\"#_ftn6\" name=\"_ftnref6\">[6]<\/a>, celle d\u2019un kilo de viande est environ <strong>10 fois sup\u00e9rieure <\/strong><a href=\"#_ftn7\" name=\"_ftnref7\">[7]<\/a>.<\/p>\n<p>&nbsp;<\/p>\n<h2><span style=\"text-decoration: underline;\">Le 100 % v\u00e9g\u00e9tal, la solution pour r\u00e9pondre \u00e0 l\u2019enjeu prot\u00e9ique\u00a0?<\/span><\/h2>\n<p>&nbsp;<\/p>\n<h3>Une solution incompl\u00e8te d\u2019un point de vue quantitatif et qualitatif<\/h3>\n<p>Il faut savoir que les sources v\u00e9g\u00e9tales sont <strong>moins denses en prot\u00e9ines<\/strong> que les sources animales [6]. De plus, en termes de qualit\u00e9, contrairement aux prot\u00e9ines d\u2019origine animale, les sources v\u00e9g\u00e9tales pr\u00e9sentent un profil incomplet en acides amin\u00e9s essentiels.<\/p>\n<p>Par ailleurs, dans les pays d\u00e9velopp\u00e9s, les prot\u00e9ines d\u2019origine animale occupent une place centrale dans l\u2019alimentation. Il para\u00eet encore compliqu\u00e9 de bousculer ces rep\u00e8res. La tendance est tout de m\u00eame \u00e0 une v\u00e9g\u00e9talisation douce des assiettes des consommateurs. Elles pr\u00e9sentent une <a href=\"https:\/\/www.lactalisingredients.com\/news\/blog\/quality-vs-quantity-how-to-assess-the-quality-of-proteins\/\">excellente qualit\u00e9 nutritionnelle<\/a> et le lait poss\u00e8de un plus faible impact environnemental que la plupart des autres sources de prot\u00e9ines animales.
